Marinated Tomato Salad

With gyms closed due to MCO, and with many working from home, it’s harder to stay fit and to keep the weight off.  So, we are going to start sharing some recipes which are easy to make and cheaper and healthier than ordering online. 

Serves: 4 | Total Time: 20 minutes | Calories: 152 calories per serving | Ingredient cost: RM16.30

Ingredients

  • 5ml olive oil                                 

  • 125g French beans, edges trimmed.      

  • 500g tomatoes, cut into wedges (or cut smaller if the tomatoes are large)          

  • 90g kalamata olives                  

  • 60g spring onion, chopped                   

  • 60g feta                                               

  • 1/2 cup chopped parsley or coriander   

**for Balsamic dressing**

  • 20 g garlic, minced                               

  • 15 ml extra virgin olive oil                     

  • 15 ml balsamic vinegar                         

  • 45 ml red wine vinegar                         

  • Black pepper, cracked

Directions

  1. Combine the balsamic dressing ingredients in a small bowl and set aside. 

  2. Heat the oil in a fry pan and fry the beans until tender-crisp, 2-3 minutes, then set aside.

  3. Place the tomatoes, olives, spring onion, feta, and most of the parsley or coriander into a serving dish (retain some for garnish).  Once the green beans have cooled enough to handle, slice into 45-degree pieces and add to the serving dish. 

  4. 10 minutes before serving, add the balsamic dressing, mix well, and set aside to infuse. 

  5. Garnish with the remainder parsley or coriander and serve. 

Note:

  • Feta cheese can be served on the side or left out if you’re not a cheese person.

  • Salad can be served along with crusty bread or as a side to a meat dish.
